Vintage cognac: types and features
Branded cognacs are local drinks from the countries of the former Soviet Union. The average aging period of such cognac is more than 6 years, and maturation occurs only in oak barrels. The volume of alcohol is 40-57%.
This cognac can be divided into three "age" groups:
- aged cognac (AC) - ripens 6-7 years;
this includes the varieties "Big Prize", "Koktebel", "Moldova"; - aged cognac of the highest quality (ACHQ) - 8-10 years; represented by the varieties "Gremi", "Kakhovka", "Kuban", "Nistru";
- old cognac (OC) - more than 10 years; varieties "Azerbaijan", "Armenia", "Dnipro", "Tbilisi", "Uzbekistan".
Collectible cognac is called with additional aging.
Grape varieties that are most often used in the production of vintage cognac: aligote, kakhet, tsolikouri, rkatsiteli.
For each of these groups, the standards set the amount of alcohol and sugar.
- AC - the volume of alcohol 40-42%, sugar content - 7-12 g / l.
- ACHQ - has an alcohol content of 40-45%, sugar content - 7-25 g / l.
- OC has 40-75% alcohol and up to 20 g sugar per cubic dm.
Any branded cognac is made from aged cognac alcohol obtained from grapes. The color of the drink ranges from light golden to light brown.
